Rhubarb
Apple rhubarb crisp
2 c. chopped apples
2 c. chopped rhubarb
¼ c. orange juice (optional)
½ c. sugar
1 c. flour
1 c. rolled oats
½ c. vegetable oil or melted butter
¼ tsp. salt
½ tsp. ground cinnamon
Preheat the oven to 375 degrees. Combine the apples and rhubarb in a bowl. Add ¼ c. sugar and the orange juice, is using, and mix well. Spread the fruit mixture into an 8 x 8 baking dish. Mix together the flour, oats, salt and cinnamon. Add the oil or melted butter and stir until well combined. Spread the topping over the fruit layer and bake for 35-45 minutes, until the crisp is bubbly and the topping is golden. Let cool a few minutes before serving. Serve with yogurt, vanilla ice cream, whipped cream, or just plain. Serves 4-6.
